Dairy-Free Peanut Butter Stuffed Double Chocolate Cookies

Ingredients
  

  • Dough
  • ½ cup soften Country Crock plant butter
  • ⅔ cup light brown sugar
  • ¼ cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 1 cup All purpose flour
  • 1 tsp baking soda
  • 1 tsp salt
  • ¼ cup special dark cocoa powder
  • 1 cup Dairy Free Chocolate Chips
  • Peanut butter filling
  • ½ cup creamy peanut butter
  • ¼ cup powdered sugar

Instructions
 

  • Preheat oven to 350F
  • Mix peanut butter and the powdered sugar together in a small bowl. Scoop tablespoon balls and roll and flatten slightly until all of the peanut butter mixture is used. Place on a lined baking sheet and freeze for 30 minutes.
  • In your stand mixer cream together the butter, granulated sugar and brown sugar until light in color. Add the egg and vanilla mix until combined.
  • In a small bowl mix together the cocoa powder, flour, baking soda, and salt. Slowly add to the mixer just until the dry ingredients are incorporated. Add the chocolate chips.
  • Refrigerate for like 30 minutes to make dough easier to work with.
  • Take 2 Tbsp chocolate dough and 1 frozen peanut butter. Place the peanut butter in the center of your dough and roll into a ball. Place on a lined baking sheet and repeat until all the dough is used.
  • Bake cookies at 350F for 12-14 minutes.
  • Makes 12-15 cookies.
