Easy Ham and Cheddar Omelet

More breakfast food :)

Omelets are great when you want a delicious and a little fancy breakfast, but are short on time.

They are super easy to make, you can get creative with the toppings and if you’re trying to watch your diet you can even make them healthy :)

Some of my favorite toppings are bacon, tomatoes, steak, salsa, mushrooms, spinach and parmesan. But you can use whatever you want!

So we should be moving into our house next weekend! I can’t wait!

Right now we are pretty much living out of boxes….

and since we bought new furniture already and have nowhere to put it

it’s just sitting randomly in the middle of the living room, it’s like a obsticle course…

Our apartment looks more like showroom then a home!

And I should really start packing all my kitchen stuff…

all the random appliances I use once a year but I just gotta have.

And all my spices and canned goods.

And all my baking supplies…

ahhh!

Easy Ham and Cheddar Omelet

Serves: 1

Ingredients:

  • 3 eggs
  • 3 tbsp skim milk
  • salt and pepper
  • shredded cheddar cheese
  • cubed ham
  • about 2 tbsp butter
  • chopped green onions

Directions: In a bowl, combine the eggs, milk some salt and pepper. Give it a good whisk, you want to incorporate a lot of air into the eggs so whisk, whisk, whisk!

In a nonstick pan over medium heat, melt the butter. When hot, pour in the egg mixture. Don’t stir!!! Just let it cook for about 90 secs, you will notice the bottom starting to set.

Using a spatula, lift one side of the omelet, tilt the pan and let all the liquid egg to go to the bottom. Repeat with the other side of the omelet until there’s no liquid left.

With a spatula, loosen the omelet and make sure it hasn’t stuck to the pan. Now with the help of a spatula, flip the omelet.

Don’t be intimated of the flipping, just take a deep breath and quickly flip it!

Put some shredded cheese and ham in the center of the omelet in a straight line.

With the spatula, fold the omelet over to cover the filling.

Turn the heat down to low, top the omelet with some more shredded cheese, cover and let the cheese melt.

Serve with chopped green onions.

 

Awesome Ham and Potato Soup to Welcome Fall


Alright so I might be a bit early,

but I love fall!!!

As much as I love summer, I am absolutely sick of it and ready for the colder weather, comfy clothes, rainy days and soup :)

And I don’t have to worry about fitting in a bikini so that’s definitely a plus!

And I am finally allowed to eat soup. Without feeling like a complete weirdo! I mean cmon soup in the middle of summer? When It’s 110F outside?

Yes, I love me some good soup.

It’s comforting, easy-peasy to make, only 1 pot needed! and super tasty :)

And this soup definitely does not disappoint!

It’s light yet creamy, packed with ham, potatoes, a little cheese and some veggies!

The perfect soup for fall (or summer)!

Ham and Potato Soup

Serves 6

Ingredients:

  • 2 tbsp olive oil
  • 1/2 onion, chopped
  • 2 garlic cloves, minced
  • 1/2 cup celery, diced
  • 1 1/2 cup ham, cubed
  • 4 cups diced potatoes
  • 3 1/2 cups chicken broth, reduced sodium
  • 1 chicken bouillon cube, crushed
  • 4 tbsp butter
  • 4 tbsp flour
  • 2 cups milk (I used skim)
  • 1/2 cup frozen peas
  • 1/2 cup cheddar cheese, shredded
  • salt and pepper

Directions:

In a dutch oven over medium high heat, heat the oil. When hot (but not smoking) add the onions. Cook for 3 mins. Add the garlic and celery and cook for another 2 mins. Add the ham, potatoes, broth and crushed bouillon cube. Bring to a boil, then cover and reduce heat to low. Simmer for 15mins.

In a saucepan, melt the butter. Add the flour and stir to combine. Cook for 1 min. Slowly add the milk, whisking constantly, breaking up any lumps.

Add the milk mixture to the potato soup and stir to combine. Cook for 20mins.

Add the peas and cook for 5 mins.

Turn the heat off and add the cheese. Stir to combine. Add salt and pepper to taste.

Serve with toasted bread and extra cheese sprinkled on top.

Chicken Bacon Ranch Pizza

This is the Bomb!!!

So a few days ago, I was going through a stack of old magazines and newspapers that have been pilling up on my dresser for a while now and since we are moving soon, it was time to throw away and organize some things. Well as I was going through the junk, an ad popped at me.

A pizza ad to be exact.

And since Mr. Picky was right next to me, he noticed. And he said that he was craving pizza. Badly.

So of course I had to make some.

He rarely has any requests when it comes to food so when he does I try to accommodate him as much as possible.

All he wanted on his pizza was chicken, bacon and ranch.

I made it happen and it turned out fricken fa-bu-lous :)

I love making homemade pizza! I just really don’t see the point in spending $15-$20 on something that is really cheap to make! I also love that I know exactly what goes in it and can customize it however I want:)

If you can, make your own dough, the recipe I use is very easy to make and super quick so you definitely need to give it try.

But if you are short on time go ahead and cheat, its ok :)  You can get pizza dough from your local grocery store or ask your favorite pizza place and they might sell you some!

Chicken Bacon Ranch Pizza

Makes 1 pizza

Ingredients:

  • Pizza Dough
  • 8 oz tomato sauce
  • 1 tsp dried basil
  • 1/2 tsp garlic powder
  • 1/4 tsp sugar
  • 1/2 tsp salt
  • 1 tsp red pepper flakes
  • 2 medium small chicken breasts, shredded
  • 4 slices of bacon, cooked, drained and crumbled
  • about 2 cups of shredded italian blend cheese
  • ranch to drizzle (I used bacon ranch)

Directions: Preheat oven to 375F.

Roll out the pizza dough and transfer to a pizza pan. Using your fingers, create a crust.

In a bowl combine the tomato sauce, basil, garlic, sugar, salt and red pepper flakes.

Cover the crust with the tomato sauce. Top with shredded chicken, bacon and cheese.

Bake for 23-25mins.

Let cool for 5 mins then drizzle ranch all over!

Devour :)

Notes:

- To shred chicken breasts: In a pot, bring about 2 cups of water to a boil. Add the chicken breasts, return to a boil. Turn the heat to low and simmer for 30mins or until the chicken is easily pierced with a fork. Let it cool and shred with your fingers or 2 forks.

Lighter Chicken Parmesan

Alright so today I will be sharing a really easy recipe that requires minimum work and a few pantry-staple ingredients :)

Easy. Breezy. Beautiful. Chicken Parm!

Absolutely love it :)

The chicken is juicy and covered in yummy marinara and lots of gooey cheese, served with some linguine in marinara and some crusty garlic bread - you have a perfectly ahhmazing meal that was really easy to make :)

And since the chicken is baked rather than fried, it makes it healthier. So go ahead and pile on the cheese :)

Lighter Chicken Parmesan

Serves 2

Ingredients:

  • 2 boneless chicken breasts, pounded to 1/4 to 1/2 in thickness
  • 1 egg
  • 1/2 cup panko breadcrumbs
  • 1/4 cup shredded parmesan cheese
  • 1/4 tsp garlic powder
  • 1/4 tsp dried basil
  • salt and pepper
  • 3/4 cup marinara sauce
  • 4 slices of mozzarella
  • extra shredded parmesan for topping

Directions:

Preheat oven to 400F.

Whisk the egg in a bowl. Mix the flour, panko, parmesan, garlic. basil in a shallow dish. Salt and pepper both sides of your chicken breasts, then dip the chicken first in the egg then in the flour mixture. Place on a foil lined baking sheet. Bake for 16mins flipping once halfway through.

In a 8×8 baking dish, pour 1/4 cup of the sauce. Top with the cooked chicken breast, then with the remaining marinara. Top with a few slices of mozzarella and a generous amount of shredded parmesan.

Bake for another 5-8 mins or until the cheese is melted and the chicken is cooked through. Sprinkle with some chopped fresh basil.

Serve with pasta and garlic bread. Enjoy :)

These puppies are soo easy to make, require only a couple of ingredients and just 5 mins to assemble! They will be gone before you know it! Me and Mr. Picky finished them in literally 5mins, so I would recommend doubling the recipe :) Kids will adore these! You can also make them in advance, just assemble put them in the pie plate, cover with plastic wrap and stick in the fridge until you are ready to use them! Even freeze them!

They are super addictive and will definitely become a regular in my house :)

Cheese melted to perfection, super meaty and the garlic, buttery crust- ahh fabulous!

Pizza Bites

  • 1 can refrigerated pizza dough
  • mini pepperoni (or regular quartered)
  • 6 oz block mozzarella (cubed)
  • 2 tbsp butter (melted)
  • 1/2 tsp italian seasoning
  • 1/8 tsp garlic powder
  • warm pizza or marinara sauce for serving

How to make: Preheat oven to 400F. On a lightly floured surface roll out your pizza dough into a large rectangle. Cut into 18 squares/rectangles. In the center of each square place a couple of pepperoni and 1 or 2 cubes of mozzarella. Pinch the ends together to seal and place seal side down on a greased pie plate. Repeat with remaining of dough. Combine the melted butter, garlic powder and italian seasoning and brush it all over your pizza bundles. Bake for 16-20 mins or until golden. Serve with marinara sauce!

This cookies rock! They are extremely easy to make and soo absolutely divine :)

So we haven’t been eating at home lately so that’s why I haven’t had too many new posts, oops! But no worries, I will make up for that starting with these glorious cookies! nom, nom, nom… and by the way I had the weirdest dream ever last night, I think I am going crazy, maybe, well most likely. So I’ve been trying to actually grow out my nails, I have the weakest nails ever and brake by just looking at them, seriously, but lately for some unknown reason they have become a bit stronger and actually growing (gasp!), so my dream was that I broke a nail! How bizarre! I woke up and first thing I did was look down and see if it was true, what can I say I am a little obsessed! So with that being said Mr. Picky is on dish duty, I am not taking any chances lol! And speaking of Mr. Picky he was totally in clean-mode last night! I was laying in bed all afternoon reading a book being super lazy while he was cleaning lol! He was vacuuming, scooping the litter box (for the first time EVER!), dusted and did the dishes! And he actually enjoys doing it himself and yells at me when I attempt to clean anything “You missed a spot”, “You call that clean”, “Just let me do it!” lol! By all means go ahead please!

But enough of that, you seriously need to make these cookies they are awesome!

Here’s how:

Super Chocolate Nutella Cookies

Makes a dozen

Ingredients:

  • 1 stick butter, softened
  • 3/4 cup sugar
  • 1/2 tsp vanilla extract
  • 1 egg
  • 1 cup flour
  • 1/2 tsp baking soda
  • 1/8 tsp salt
  • 1/4 cup cocoa powder
  • 4 tbsp Nutella
  • 1/2 cup dark chocolate chips

Directions: In the bowl of electric mixer, cream butter, sugar, egg and vanilla until fluffy. Add the flour, baking soda, salt and cocoa powder and beat until mixture starts coming together. Add the Nutella and beat until smooth. Fold in the chocolate chips. Refrigerate for 2+ hours or put in freezer for at least 30mins. Scoop out with an ice cream scoop on a pregreased baking sheet covered with parchment paper. Bake at 350F for 10-12 mins.

This pizza dough is really easy to make! Like sooo easy!!!! I’m always afraid to work with yeast. I’ve never failed making anything with it, but in the back of my mind there is always a little bit of fear. Is my dough going to rise? Is the water lukewarm enough? Is it warm enough in here? But like I said so far I’ve never failed at it so I must be doing something right. I’m not yet familiar enough with it to create my own yeast recipes so I found this one of . If you haven’t seen her youtube videos or her website, you must – she is great! Ok so although my pizza tasted amazing it was a little crunchier than I would’ve liked, I wasn’t paying attention and cooked it a little too long, but it still tasted wonderful! The sauce was great, the chicken nice and crispy, it tasted just like chicken parm on a pizza :) So I would def make it again (just cook it a little less next time)Before it got all big and fluffy (forgot to take a pic after it rose)

Easy Pizza Dough

Makes 2 10in pizzas

Recipe from:

Ingredients:

  • 3 1/2 cups flour
  • 2 tsp salt
  • 1 tsp sugar
  • 2 Tbsp of canola oil (or EVOO) (plus a little extra for brushing)
  • 1 1/3 cups of warm water, 110 degrees
  • 1 envelope of yeast (Not Instant)

Directions: In your measuring cup, combine the warm water and yeast. Let it sit for 3 mins.

In the bowl of electric mixer (with dough hook) combine the first 4 ingredients and then on medium speed add the water/yeast mixture. Beat on medium until the dough starts to form, the turn the mixer to low and continue to mix for 10 mins. With a pastry brush, oil two bowls and set aside. Divide the dough into two even halves and roll into a ball. Place each ball in a bowl (seam side down) and brush some more oil on your dough. Let it rise in a warm place for 2 hours or until double the size.

Super Easy No-Cook Pizza Sauce:

Covers 2 10in pizzas

Ingredients:

  • 1 (15oz) can tomato sauce
  • 1/4 tsp dried oregano
  • 1/4 tsp dried basil
  • 1/4 tsp paprika
  • 1/4 tsp garlic powder
  • a big pinch of chopped parsley
  • a pinch of sugar
  • salt and pepper to taste

Directions: Combine all ingredients in a bowl! YUM!

For Chicken Parmesan Pizza

1 10in pizza

Ingredients:

  • 1 ball of dough (recipe above)
  • 1/2 of the sauce recipe (above)
  • 1 large boneless chicken breast (cut into thin strips)
  • 4 tbsp seasoned bread crumbs
  • plenty of shredded parmesan cheese
  • plenty of mozzarella cheese

Directions: Preheat oven to 350. Dredge the chicken in breadcrumbs and bake on a parchment paper lined baking sheet for 15 mins (flipping once halfway through). Increase the oven temp to 450F and preheat your pizza stone(if using one). Roll out your pizza (with some flour) to form a 10in circle and with your fingers shape a crust. Cover the pizza with the sauce, chicken and cheeses. Transfer to pizza stone (if using)  and bake in preheated oven for 10-15 mins (depending on oven and how crispy you want it) Let it cool, slice and enjoy!!!

I’m sooo loving these right now! Amazing breakfast done in 15 mins, very affordable and best part super-easy clean up! I mean I love pancakes, but I hate cleaning up…all the measuring cups, utensils, bowls, plates it’s just soo tedious! It turns a relaxing weekend morning into a chore and you all know how much I hate chores! So if I am craving something sweet for breakfast with little fuss, these chocolate croissants are the way to go :) These will be best with homemade dough, but since I am not patient and it takes a lot of time to make (and enormous amount of butter, yikes) I am taking the easy way and using crescent rolls! Cheap and saves a ton of time (and hair pulling)!

 

Easy Nutella Croissants

Servers 4 (makes 8 croissants)

Ingredients:

  • 8 oz tube crescent rolls (original)
  • about 8 tbsp Nutella
  • 1 egg + 1 tbsp water (egg wash)
  • confectioners sugar (for dusting), optional

Directions: Preheat oven to 350F. Open up the can of crescent rolls and divide into 8 triangles. Place a dollop of Nutella (about a tbsp) in the center of each triangles (I then spread it out a bit to cover part of the edges= Nutella in every bite yum!) Roll up your triangles, seal the edges with your fingers and transfer the rolls on a parchment paper lined baking sheet. In a small bowl beat the egg with water. With a pastry brush, gently brush a little bit of the egg wash over the rolls. Bake for 10-12 mins or until golden brown. Sprinkle with powdered sugar and enjoy :)

This is a great low calorie smoothie to get your day going :) It’s tasty, easy and fast to make!

And by the way, I don’t know what to make for dinner tonight… What are you having? :) Inspire me! I don’t know what I am craving, all I know is it has to be semi-healthy lol. And we reeally have to move- living right next to Cane’s Chicken is a torture! A torture I can’t resist! Someone needs to come workout with me, I’ve been lazy… like yesterday I had every intention of going to the gym, I even started walking towards my car all ready to go when I realized I forgot my waterbottle and had to come back… I never left again…oops!

Verry Berry Banana Smoothie

Serves 1

Ingredients:

  • 1 banana
  • 4-5 strawberries
  • 20 blueberries
  • 1 tbsp honey
  • 1/2 cup greek yogurt (or regular will work fine too)
  • 8 ice cubes

Directions: Combine all ingredients in a blender and pulse until smooth. Serve with a straw :)  

Let’s make burgers! These are fricking awesome :) So juicy and flavorful and so easy to make! I made these last night since it was my last cheat day and I will be dieting/eating healthier from today on for 2 weeks.

And by the way I really want to be organized. I really do. Like organize my dresser instead of having a giant pile of clothes next to it, or make weekly menus so I can do all my grocery shopping all at once rather than visiting the grocery store every day for only a couple of items, but that’s impossible! I’ve tried making menus before but I can never stick to them since I don’t know what I will be craving 5 days from now so that will probably never work. So anyways let’s return to these super yummy turkey burgers :) Here’s how to make them:

Better-than-Beef Turkey Burgers with Spicy-Garlic Mayonnaise

Ingredients:

For burgers:

  • 10 oz ground turkey
  • 2 tsp bread crumbs
  • 1/8 tsp cayenne pepper
  • 1/4 tsp paprika
  • 1/8 tsp garlic powder
  • 1/4 tsp savory spice
  • a few dashes Worchestire Sauce
  • salt and pepper
  • 1/2 tsp Grill Mates steak rub, divided use (or your favorite grill rub)
  • 2 slices of sharp cheddar cheese
  • Hamburger Buns

For sauce:

  • 5 tsp mayonnaise
  • 1 tsp ketchup
  • 1/8 tsp cayenne pepper
  • 1/8 tsp Garlic

Topping of choice: Lettuce, bacon, tomatoes, pickles, avocado or anything else your heart desires :)

Directions:

For burgers: In a bowl, combine the first 8 ingredients together. Form into 2 burger patties. Top each pattie with 1/8 tsp steak rub on each side. Grill each side for a couple of minutes until cooked through. When the burgers are about done melt the cheese on top.(I used my George Forman’s Grill- cold outside)

For sauce: Combine all ingredients together.

To assemble: Spread the mayonnaise among the hamburger buns. Top the buns with the grilled burgers and any toppings of choice :)
