Cappuccino Pancakes with Mocha Syrup

I love coffee.

And I am totally addicted to Starbucks.

When we moved into our new house I realized there was a Starbuck’s on my way to work.

I didn’t have to go out of my way at all!

A Starbucks with a drive-through that is never really busy.

It doesn’t get any easier for a coffee addict to get their fix.

I adore their white chocolate mocha (soy milk with whipped cream) , Starbucks gets expensive.

I was spending $5 a day, 5-7 days a week, every week.

That $5 adds up real quick!

So when I got my Costco membership I saw that they have the Starbucks Frappuccino bottles that by the way are totally deelish for under $1 a bottle.

That’s some huge savings :) Enough to buy a new pair of shoes :)

So bye-bye Starbucks drive-through and hello convenient cheap bottles of yumminess :)

So anyways, I love coffee.

And these pancakes are totally coffeelicious :)

They are kind of cakey (in a good way!) and dense, not overly sweet and the mocha syrup has a nice coffee punch and then top it off with a big dollop of cool whip that taste like ice cream (ice cream for breakfast-yes please) and you have an ahhmazing reason to wake up!

Wake up and smell the coffee!

Cappuccino Pancakes with Mocha Syrup

Serves: 4

Ingredients for pancakes:

  • 1 1/2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 1/2 tbsp instant espresso
  • 3 tbsp sugar
  • 1/2 tsp salt
  • 1 large egg
  • 1 cup skim milk
  • 2 tbsp light butter, melted
  • 1 tsp vanilla extract

Directions:

  1. In a bowl combine the flour, baking powder, espresso, sugar and salt.
  2. Make a well in the middle and add egg, milk, butter and vanilla.
  3. Stir just to combine but batter will be a little lumpy.
  4. On a preheated griddle, pour 1/4 cup of batter and cook for 2 mins or until little bubbles form all over surface.
  5. Flip and cook for another minute.
  6. Repeat will remaining batter.

Ingredients for mocha syrup:

  • 1/2 cup water
  • 1 tsp instant espresso
  • 1/4 cup cocoa powder
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 1 tsp vanilla extract

Directions:

  1. In a small saucepan whisk all the ingredients together.
  2. Over medium low heat bring the mixture to simmer, stirring frequently and cook for 5 mins or until thickened.
  3. Turn the heat off and stir in vanilla.
  4. Pour over pancakes.

Chocolate Chocolate Chip Pancakes

So I’ve been going to ihop a lot lately.

They keep sending me B1G1 coupons in my email (like at least once a week!) and since the nearest location is 3 mins away from me I can’t resist.

I absolutely love their chocolate chocolate chip pancakes!

They are soo absolutely delicious! They are extremely chocolaty!

Like “omg I’m getting a cavity eating this but I can’t stop” kinda sweet!

So I decided to make my own version and Chris actually said he liked mine better.

And coming from him (a complete ihop junkie that is ok with eating ihop everyday for the rest of his life!) it really means a lot :)

So you know these are good!

They are light, fluffy, full of chocolate chips, but not overly sweet, topped with some whipped cream and syrup – the perfect weekend breakfast :)

And by the way, I’m obsessed with the song One More Night by Maroon 5! Like completely obsessed!

I have it on repeat and I’ve heard it more times in the past 2 days then it should be legal.

And every time I hear it while driving, I turn it all the way up and sing obnoxiously loud…

Won’t be surprised if I cause an accident one day…..

One song I can’t stand right now Katy Perry – Wide Awake…

I  love Katy Perry, but this song I just can’t fricking stand…

Every time I hear it it makes me cringe and I have to change the station right away.

Like it pretty much gives me a headache…

Chocolate Chocolate Chip Pancakes

Makes 6 pancakes

Ingredients:

  • 1 cup flour
  • 5 tbsp cocoa powder
  • 1 tbsp sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/8 tsp cinnamon
  • 3/4 cup buttermilk
  • 1 egg
  • 1/2 tsp vanilla extract
  • chocolate chips, whipped cream and syrup to serve

Directions: In a bowl, combine the first 7 ingredients together. In a measuring cup, measure the buttermilk add the egg and vanilla and whisk to combine. Slowly add the wet ingredients to the dry and whisk until all the dry ingredients are wet, but don’t overmix -the batter should be a little lumpy.

Over medium heat, melt some butter in a skillet and let it get a hot. Pour about 1/3 cup of batter into the skillet and let it cook until little bubbles form all over the surface. Flip and cook until the other side browns too. Repeat with the rest of the batter.

To keep pancakes warm : Preheat oven to 200F. Place the cooked pancakes on a cookie sheet and keep warm in the oven.

Serve 2 pancakes a person. In between each pancakes place some chocolate chips :) And since the pancakes are warm the chocolate chips will melt and be all gooey :) Top with whipped cream and syrup! Enjoy :)

Mini Brownie Batter Chocolate Chip Pancakes

Hi! It’s been awhile, I know. But life’s been busy! I’ve been working a lot of night shifts, so I haven’t had much time to cook and when off we’ve been going out. But this weekend we are cooking :)

So this morning when I woke up all I wanted was pancakes! But not just any pancakes- I wanted good for you, fluffy chocolate pancakes and they were beyond amazing! And they had to be mini, isn’t food soo much cutter when it’s tiny and that way when you eat 3-4 pancakes you don’t feel as bad! And they are soo filling! VERY extremely easy to make and I’m sure you already have everything on hand :) Pancakes for dinner anyone? You are going to love them!!! Serve them with a light maple syrup and you have an amazing breakfast that will keep you full for hours all for under 300 calories!

1/8 measuring cup makes the perfect mini pancakes :)

Mini Brownie Batter Chocolate Chip Pancakes

Serves 2 (makes about 8-9 mini pancakes)

Ingredients:

  • 1/2 cup all-purpose flour (you can also use gluten-free flour if you want)
  • 1/2 tsp baking powder
  • 2 tbsp Hershey’s Dark unsweetened cocoa powder
  • 2 tbsp + 2 tsp sugar (or you can use any other sweetener like stevia)
  • pinch of salt
  • 3 tbsp unsweetened applesauce
  • 2 tsp vanilla extract
  • 11 tbsp milk (you can use nondairy if you prefer)
  • semi sweet or dark chocolate chips, optional

Directions: In a medium bowl combine all the dry ingredients. In a measuring cup combine all the wet ingredients. Now pour the wet ingredient into the dry and stir to combine. Don’t overbeat it! The batter should be a little lumpy but all the dry ingredients should be saturated. Heat a  pan or griddle on medium high heat and spray with cooking spray. Pour some batter on the pan (about 1/8 cup) sprinkle with some chocolate chips and cook until perfectly set. Flip and cook that side for about 1-2 mins. Repeat with the remaining batter. Serve with syrup! Yum!
