The first time I had this I was at my friend Mary’s house and she made this for dinner and I was hooked! It was sooo good! A week later, I was craving it again and decided to recreate it and it turned out beyond delicious! I just wanted more and More! Darn, there goes my diet…. Anyway, although I don’t know the exact recipe and I changed sooo many things around to fit my taste, I think it turned out even better than the original! (sorry Mary
) This is really easy to make, great on a busy weeknight, it has just the right amount of spice and unbelievable flavor! Mr. Picky gave it a rating of 12/10 and he is pretty hard to impress! You have to give it a try-you won’t be sorry!
So here’s this awesome recipe:
Fiesta Stuffed Shells
Serves 6
Ingredients:
- 1 lb ground beef
- 8 oz cream cheese (cut into pieces)
- 1/4 tsp paprika
- 1/4 tsp cayenne pepper
- 1/2 tsp chilli powder
- 1/4 tsp garlic powder
- 1 (15 oz) can corn
- 1 (15 oz) can black beans
- salt and pepper to taste
- 24 jumbo shells
- 1 cup marinara sauce
- 1 cup salsa
- 1 (2.25 oz) can black olives (sliced)
- 2 medium tomatoes (diced)
- 1/2 cup colby and monterey jack cheese (shredded)
Directions:
Cook jumbo shells according to package instructions. Drain and set aside.
In a saucepan over medium high heat, brown the ground beef. Drain of excess fat. Add cream cheese and mix well until melted. Turn down the heat to low and add the next 7 ingredients.
In a bowl mix together the salsa and marinara sauce. Grease a 9x13in baking dish and cover the bottom with 1/2 a cup of the sauce. Stuff each shell with beef mixture and place in the baking dish. Top with remaining sauce. Bake at 350F covered for 20 mins. Uncover and top with black olives, tomatoes, and cheese. Bake, uncovered, for 5 more mins. Serve with sour cream.






A friend of mine on myfitnesspal makes these. They sound really good and have been on my list of things to make for a weekday meal for a while. I need to get around to it!
I made this last night. I kept looking at this picture all week and decided that I had to have it! So here in Peru, we don’t have all the ingredients available (like black olives, salsa or the shells). But I took the inspiration from you to modify the recipe to work with what was available.
Delicious and plenty left for dinner and maybe lunch tomorrow!
